Founded in the mid-2010s, Boann Distillery was built with a clear mission: to revive and celebrate the historic tradition of Single Pot Still Irish whiskey. The distillery is located in Drogheda, an area once known for its thriving whiskey production but which had gone more than a century without distilling before Boann’s arrival. By commissioning their distillery and beginning production in 2019, the Cooney family helped restore a craft that had long been part of the region’s identity.

A key part of Boann’s success is its talented team. The distillery began producing spirit in December 2019 using custom copper pot stills designed to enhance flavor development during distillation, and now has a nine strong distilling team led by Head Distiller, Alex Witt. Boann’s distillation approach combines tradition with cutting-edge engineering. The distillery uses handcrafted copper pot stills equipped with patented nano-technology, allowing significantly greater copper contact with the spirit vapors during distillation, a technique that helps refine the whiskey’s character and complexity.
After several years of maturation, the distillery reached an important milestone when its first fully self-produced aged whiskeys were released in 2024, marking the culmination of years of careful distilling and cask aging.

Alongside innovation, sustainability is central to Boann’s philosophy. The distillery is a Gold member of Ireland’s Origin Green sustainability program, with initiatives that include a closed-loop water system, solar energy usage, and sourcing barley and grains from certified Irish suppliers. Spent grain from the distillation process is even repurposed as cattle feed for local farms, ensuring a responsible “grain-to-glass” production cycle.
With its combination of family heritage, technical craftsmanship, and environmental responsibility, Boann Distillery is helping lead the modern revival of Irish whiskey. By honoring tradition while pushing the boundaries of distilling innovation, the Cooney family continues to share the spirit of Ireland with whiskey lovers around the world.
